Course Overview
Our
Baking & Pastry Full Training Program is designed to give students a broad and deep foundation in the art of French Baking and Pastry, from pastries to chocolate to viennoiseries, and everything in between.
With 256 hours spent
in the kitchen classroom, students will master more than 100 recipes and techniques.
In the Baking & Pastry Full Training Program, students receive the rare opportunity to learn the Art of Baking and Pastry in an intimate setting while being personally mentored by the Cordon Bleu Paris certified Pastry Chef, Elise Lévine-Davis.
Each class session lasts 4 hours
and includes the following elements:
- Discussion about the assigned reading paper(s),
- Recipe of the day: preparation, cooking/baking time,
- Clean up,
- Review of key points from the class.
Preparatory reading (about 1-2 hours per session) is required prior to arriving for each class session.
At the end of each level, there will be an exam: a written exam (1 hour of questions about the recipes and the reading papers of the level) and a practical exam (3 hours to solo bake an assigned tart or cake). Successfully passing the exam for each level is a prerequisite for the next level.
