Course Overview

Our Baking & Pastry Full Training Program is designed to give students a broad and deep foundation in the art of French Baking and Pastry, from pastries to chocolate to viennoiseries, and everything in between. 
With 256 hours spent in the kitchen classroom, students will master more than 100 recipes and techniques.  

In the Baking & Pastry Full Training Program, students receive the rare opportunity to learn the Art of Baking and Pastry in an intimate setting while being personally mentored by the Cordon Bleu Paris certified Pastry Chef, Elise Lévine-Davis

Each class session lasts 4 hours and includes the following elements:
  • Discussion about the assigned reading paper(s),
  • Recipe of the day: preparation, cooking/baking time,
  • Clean up,
  • Review of key points from the class.

Preparatory reading (about 1-2 hours per session) is required prior to arriving for each class session.

At the end of each level, there will be an exam: a written exam (1 hour of questions about the recipes and the reading papers of the level) and a practical exam (3 hours to solo bake an assigned tart or cake). Successfully passing the exam for each level is a prerequisite for the next level.

Course Details

The Baking & Pastry Training Program has 4 levels, which must be taken in sequence. 
Each level is composed of 16 class sessions, each of which is 4 hours

Tarts, Choux, Sponges, and Loaf Cakes

Creams, Mousses, Meringues, and Macarons

Puff pastry, Viennoiseries, Brioches, and Simple Desserts

Chocolate, Decoration, and Layered Desserts

Course Logistics


  • Courses are held in Bergen Park, Evergreen, Colorado.
  • There are 4 levels: Basics 1, Basics 2, Intermediate 1, Intermediate 2.
  • Each level costs $2,500 per student.
  • What is included
    • All the reading papers, materials, equipment, and ingredients. 
    • At the end of each unit, the student leaves with a cake (sometimes several) for a least 6 people. 
  • What is not included
    • 2 regular textbooks, an apron, safety shoes, a notebook, a camera or phone (to take pictures during the class), a cake carrier.
  • Entry requirements:
    • Candidates must be at least 13 years of age and have a passion for baking.
